The Jura, Bubbles, Oysters and Muscadet

A recap of some recent eats and drinks coming your way. Tried another tasty wine from the Jura. This one from Jacques Puffeney, is a Poulsard. Poulsard is probably a grape you haven't heard much about as it is found mostly in the Jura region. Pulsard produces light-colored red wines that are packed with flavor, yet are light on their feet and pair nicely with a variety of foods.
Last weekend I roasted some Blue Pointe oysters (from YDFM) using a recipe from Joe Beef and paired the oysters with the 2010 Domaine de la Louvetrie Muscadet de Serve-et-Maine Sur Lie. Oysters and Muscadet = win, and this Muscadet is quite nice for under $15. Thanks again to Le Caveau for the wine.
Whipped up, yeah right, Thomas Keller's recipe for lobster stock. I later used the stock to make lobster mac and cheese. I love the outcome here, but I'm still not a huge fan of working with lobster for the work and cost relative to the end result.
With the lobster we tried this tasty and cheap sparkling wine from Veuve Moisans in the Loire Valley. About as good as you can expect for $12 in the world of sparkling wine. But really pretty tasty regardless. I'm going back for more. This sparkling wine, as well as the two others mentioned above, came from Le Caveau Wines in Chamblee, my favorite little wine shop.

Home Cooking: Smoked Duck

I've professed my love for duck here before. It has become one of my favorite proteins. Once you get hooked on duck, it will make chicken seem like a second-class citizen. This weekend, I roasted a whole duckling on my Big Green Egg. I bought the Bell & Evans duck at Whole Foods, and as much as I love being hooked on duck, I don't really love the fact that a whole 5lb duck costs about twice as much as a whole chicken.

I rubbed the duck with salt, pepper, and smoked paprika about 8 hours before roasting. I roasted for a total of six hours, keeping the BGE between 275-285 degrees. At the six hour mark the skin was nice and crispy and the meat just fell off the bone with a slight tug. Interesting that duck smoked over low heat tastes a bit like pulled pork when it's finished.
What to do with all this duck. You could just scarf it down, but you could also use it as I did to make smoked duck banh mi pictured above. The next night I used the left over leg meat to make some tasty duck and cherry-spike-salsa tacos. That was fun, too.
I also made a little cherry tomato salad including bacon, oven-dried kale chips, and Cotija cheese.
Washed all this goodness down with a NV Henriot Souverain Brut. A very good Champagne in the $30 price range. Crisp and refreshing on a hot summer night. Beginning to think I could forgo all wine but Champagne and be happy. More on that thought later.

Revolution Doughnuts

Revolution Doughnuts, the brain child of  Maria Moore Riggs,  opened last weekend along West College Ave in Decatur. To say the shop Decaturites were anxious for the opening would be an understatement. Maria's Little Hen Bakeshop has been a regular presence at the Decatur Farmer's Market for a couple years now. The doughnut shop, from my perspective simply as a neighborhood customer, has been a hit already, with long lines and robust activity from day one. A testament to what attention to detail and hand-crafting great products can bring. Kudos to the Revolution crew.
   
The display case; which is in a constant state of needing replenishing thanks to the crowds pouring to get at these doughnuts. The doughnuts, including the salted caramel and bacon pictured above, are quite decadent and delicious, especially if you catch them hot out of the over.There are also, at any given time, several vegan options like blueberry, or the tasty vanilla bean I tried yesterday.

I would suggest you should try these doughnuts, but judging from the lines that poured out on to the sidewalk and down the block last weekend, I'm pretty sure the word is already out. 
Go get some if you haven't already. But get there early.

Recent Eats and Drinks

An old favorite I made for a Memorial Day party: Bobby Flay's Mesa Grill potato salad. Yep. Bobby Flay. That guy. But, it's damn tasty potato salad.
Smores pudding at Big Tex. Gotta follow Frito Pie with something.
I don't drink a lot of Bordeaux, but occasionally it hits the spot. The 1996 Chateau Lanessan was in the groove Sat night along side Will Harris' ribeyes cooked on my Big Green Egg.
